As a co-op member you pay 4.29 per pound of the hanging weight of the animal. That is the
same weight that the butcher charges us for processing. The term hanging weight is the weight of the carcass after the head,
tail, skin, legs and insides have been removed from the animal. That is the portion that is left hanging for dry aging. You
will then have a slight weight loss from that carass from the unwanted fluids draining from the meat while aging. There will
also be some weight loss for bone removal on the roasts and fat trimming on the steaks. That is a minor weight loss that is
required for quality of your meat.
Here is an example of a steer and what you can
expect so you can make your choice on what size order you should place.
Based on a steer with a live hoof weight of 1200 lbs it will generally come out to a hanging weight of 500 lbs. And then this
is how the sections would break down for your ordering.
ORDER SECTIONS:
1/8 = 62 lbs @ $ 4.29 = $265.98 minus your deposit
1/4
= 125 lbs @ $ 4.29 = $536.25 minus your deposit
1/2 = 250 lbs @ $ 4.29
= $1072.50 minus your deposit
That comes out to about 50% of what you would have spent
at the local grocery store for the same meat except you have no idea where it came from or what was put in it.
All orders receive the same cuts of beef, the only difference being the weight amount that you choose when you place
your order.
We do what is called a southern cut on all orders. That gets the most steaks
and premium cuts because it is being shared with other members.
Here is a list of what comes
in a typical order.
STEAKS:
T-bone:Sirloin:Porterhouse:Rib-eye:Delmonico:Filet
Top round:Shoulder:Sizzler:Blade:Flank:Sandwich(philly)steak
Stew meat:London Broil:Brisket, and Soup
Bones.
All steaks are cut 1 inch thick and neatley trimmed for fat and packaged individually.
ROASTS:
Chuck:Sirloin tip:Rump:Shoulder:Top Round:Ox
Tail
All roasts are boneless and weigh between 2.5 and 4.75 lbs.
GROUND BEEF
Ground beef is very very lean and requires slower cooking.
Ground beef is packaged in 1 lb packages.
All meat is double wrapped for long freezer life
but we would rather you order smaller section and order every couple months then having meat in your freezer for a year..that
way you are always eating fresh beef...
